Vinh Long: The Mekong Delta province of Vinh Long has set a new national record by presenting 102 dishes and side dishes made from tau hu ky, or tofu skin, at a cooking competition held on November 17. This remarkable achievement was part of the inaugural activities of the red ceramic brick festival in Vinh Long province.
According to Vietnam News Agency, tofu skin, known as tau hu ky in Vietnamese, is a product derived from soybeans. It is also referred to as bean curd skin or bean curd sheet. The process involves boiling soybeans, during which a film or skin, primarily made up of a soy protein-lipid complex, forms on the surface of the liquid. This delicate layer is then carefully removed and dried, transforming it into tau hu ky.
The festival’s cooking competition showcased the versatility and culinary potential of tofu skin, emphasizing its role in Vietnamese cuisine. The participants demonstrated innovative ways to incorporate this traditional ingredient into a variety of dishes, highlighting its cultu
